Avocado toast is all the rage lately, and for good reason! It’s delicious, easy to make, and avocados pack a lot of nutrition into each creamy bite. They’re loaded with heart-healthy fats, fiber, potassium, and iron.

To really bring on the nutritional punch, and add a little variety to this easy-to-assemble meal, you can try topping off your toast with creative combinations of other ingredients. Here are a few we recommend:

01 Avocado Toast with Arugula, Summer Squash, and Lemon

We like this one so much we actually made a video about it, which you can find here. The arugula adds a peppery punch of flavor, and the summer squash (yellow squash or zucchini, you pick!) and lemon juice lighten and brighten things up.

02 Avocado Toast with Asparagus and a Poached Egg

This is a favorite for breakfast and brunch and will give you all the nutrients you need for a morning walk. Add tomato and onion if you like, and season simply with a pinch of salt and pepper on top.

03 Avocado Toast with Cucumber Radish Salad

This cucumber radish salad adds crunch and punch to your avocado toast. And a bunch of vitamins to boot!

04 Avocado Toast with Sweet Corn Salsa

Make a simple salsa of corn, diced tomato, diced onion, and lime juice, and put three spoonfuls on top. Delish!

05 Avocado Toast with Smoked Salmon

Spread your avocado a little more thinly for this version, and add tomato, onion, and lemon juice to brighten it up. (Basically your bagel and lox with more nutrients in each bite!)
