It’s officially the season for fall produce and with that comes the opportunity to experiment with new combinations and flavors.

Sweet potatoes are some of our favorites to roast! They’re sweet and filling, just what we crave on a crisp fall day! They’re also loaded with key nutrients like vitamin A and C, as well as fiber and potassium. We’ve come up with a delicious recipe for you to test out this week! Here’s what you’ll need:

  •      1 large Potato
  •      1 large Sweet Potato
  •      1 Shallot
  •      Dried Rosemary (or get fancy with Herbs de Provence seasoning)
  •      Olive Oil


  1.     Preheat oven to 450°.
  2.     Wash and chop both potatoes into cubes.
  3.     Wash and finely chop the shallot.
  4.     Spread potatoes and shallots evenly on a baking sheet lined with parchment paper.
  5.     Drizzle olive oil and toss vegetables to thoroughly coat.
  6.     Sprinkle herbs or seasoning onto the mixture.
  7.     Add salt and pepper to taste.
  8.     Roast for 35-40 minutes, or until nice and crispy. Serve and enjoy!
